The Easiest Way to Reuse Rotisserie Chicken for Lunch or Dinner

(One of my favorite quick meals)


There are days when I open the fridge and think, “Okay… what can I make without starting from scratch?”

That’s where a rotisserie chicken always saves me.


I almost always grab one when I grocery shop because it turns into multiple meals without extra effort — especially on busy days when I still want something warm, filling, and homemade.


This is one of my favorite ways to reuse leftover rotisserie chicken for a quick lunch or dinner.




Simple Rotisserie Chicken Skillet (Quick + Flexible)



This meal comes together in under 15 minutes and uses ingredients you probably already have.



What I used:



  • Shredded rotisserie chicken (leftover from the fridge)

  • Bell peppers (I used red + green)

  • Jalapeño (optional, but I love a little heat)

  • Olive oil or butter

  • Garlic (fresh or paste)

  • Seasonings to taste

    (salt, pepper, Cajun seasoning, or whatever you love)





How I make it:



  1. Heat a skillet over medium heat with a little olive oil or butter.

  2. Add your peppers and jalapeño and sauté for a few minutes until softened.

  3. Stir in garlic and let it get fragrant.

  4. Add the shredded rotisserie chicken.

  5. Season to taste and let everything warm through, stirring occasionally.



That’s it.




How I serve it:



This is where it gets fun because it’s super versatile:


  • Over rice or cauliflower rice

  • In a tortilla or wrap

  • Inside a lettuce cup

  • As a protein side with veggies

  • Or just straight from the pan when you’re hungry and tired
