Stuffed Bell Peppers (Budget-Friendly Version)

What I used:
– 2 green bell peppers (halved + cleaned out)
– Leftover ground beef (you can use any protein)
– Cooked rice (about 1 cup)
– Diced onion
– Leftover tomato (chopped)
– Chicken broth (about 1–1.5 cups)
– Leftover tomato sauce
– Lime juice (just a squeeze for flavor)
– Chinese chili flakes (for spice)
– Seasonings: garlic powder, onion powder, salt, pepper, paprika, etc. (whatever you got!)
How I made it:
Sauté diced onion and ground beef in a pan. Season it well. Add in chopped tomato and a little leftover tomato sauce. Let it simmer.
Mix in cooked rice and a squeeze of lime juice. Stir until it’s all blended.
Stuff the bell peppers with the rice/beef mixture.
In a separate pot or baking dish, pour in chicken broth with a few onion pieces, chili flakes, and any leftover tomato sauce.
Add the stuffed peppers to the pot (cut side up), cover, and let them steam/simmer over medium-low heat until peppers are tender (around 20-30 mins).
Optional: top with cheese before serving or serve with a side salad or bread.
Frugal tip: Use whatever’s in your fridge — ground turkey, lentils, canned corn, or beans all work too!
