Sardine & Feta Onion Rounds with Roasted Bok Choy

If you’re anything like me, you love a snack that feels fancy… but takes barely any effort. This one came together with pantry staples and a few fresh ingredients—and it honestly surprised me with how good it was.
Savory, tangy, crispy, and packed with flavor, this is the kind of snack you make “just to try” and end up eating the whole plate.

Ingredients
1 can sardines (in olive oil or water, drained)
1 medium onion, sliced into thick rounds
Feta cheese, crumbled
Dried parsley
Paprika
Garlic powder (optional)
Lemon (for juice)
Fresh bok choy (or any greens)
Olive oil
Salt & black pepper

Instructions
1. Prep the Onion Base
Slice your onion into thick rounds and lay them flat on a cutting board or baking sheet. These will be your “mini bases.”
2. Add the Sardines
Break the sardines into small chunks and place them on top of each onion slice.
3. Top It Off
Sprinkle generously with:
Crumbled feta
Paprika
Dried parsley
Garlic powder (if using)
Finish with a light squeeze of fresh lemon juice.
4. Roast or Pan-Sear
Lightly drizzle with olive oil.
You can either:
Bake at 400°F for 12–15 minutes, or
Pan-sear on medium heat until the onions soften and edges crisp.
5. Roast the Bok Choy
Toss bok choy with olive oil, salt, and pepper. Roast or sauté until tender and lightly charred.
6. Plate & Enjoy
Serve your onion rounds alongside the bok choy and enjoy warm.
Tips & Variations
Swap feta for goat cheese for extra creaminess
Add chili flakes if you like heat
Serve over toasted sourdough for a heartier snack
Drizzle honey for a sweet-salty twist
