Oven-Baked Cajun Chicken & Peppers with Rich Brown Gravy

This is one of those comforting, soul-hugging meals that smells like home while it’s cooking. Tender Cajun-seasoned chicken, slow-baked over sweet bell peppers, all smothered in a rich, savory gravy—simple ingredients, BIG flavor.
Perfect for Sunday dinner, meal prep, or when you want something hearty without doing the most.
Ingredients
Chicken (any cut you like)
Cajun seasoning
Thyme
Garlic powder
Onion powder
1 tablespoon butter
Garlic paste
1 onion, sliced
Chicken broth
1 brown gravy packet
Green bell peppers, sliced lengthwise
Instructions
1. Season & Brown the Chicken
Season chicken generously with:
Cajun seasoning
Thyme
Garlic powder
Onion powder
Heat a skillet over medium heat and brown the chicken on both sides until fully cooked. Remove chicken from the pan and set aside.
2. Build the Gravy
In the same skillet:
Add 1 tablespoon butter (not a stick—just a tablespoon )
Add sliced onions and garlic paste
Stir and sauté for about 5 minutes, until fragrant and softened
Pour in chicken broth and sprinkle in the brown gravy packet. Stir continuously until the mixture thickens into a smooth, rich gravy.
3. Assemble
Slice green bell peppers lengthwise and place them in a baking dish.
Lay the cooked chicken on top of the peppers, then pour the gravy evenly over everything.
4. Bake Low & Slow
Cover the baking dish and bake at 350°F for 1 hour.
Let it rest for a few minutes before serving so all the flavors settle in.
