This is one of those comforting, soul-hugging meals that smells like home while it’s cooking. Tender Cajun-seasoned chicken, slow-baked over sweet bell peppers, all smothered in a rich, savory gravy—simple ingredients, BIG flavor.

Perfect for Sunday dinner, meal prep, or when you want something hearty without doing the most.

Ingredients

  • Chicken (any cut you like)

  • Cajun seasoning

  • Thyme

  • Garlic powder

  • Onion powder

  • 1 tablespoon butter

  • Garlic paste

  • 1 onion, sliced

  • Chicken broth

  • 1 brown gravy packet

  • Green bell peppers, sliced lengthwise

Instructions

1. Season & Brown the Chicken

Season chicken generously with:

  • Cajun seasoning

  • Thyme

  • Garlic powder

  • Onion powder

Heat a skillet over medium heat and brown the chicken on both sides until fully cooked. Remove chicken from the pan and set aside.

2. Build the Gravy

In the same skillet:

  • Add 1 tablespoon butter (not a stick—just a tablespoon )

  • Add sliced onions and garlic paste

  • Stir and sauté for about 5 minutes, until fragrant and softened

Pour in chicken broth and sprinkle in the brown gravy packet. Stir continuously until the mixture thickens into a smooth, rich gravy.

3. Assemble

Slice green bell peppers lengthwise and place them in a baking dish.

Lay the cooked chicken on top of the peppers, then pour the gravy evenly over everything.

4. Bake Low & Slow

Cover the baking dish and bake at 350°F for 1 hour.

Let it rest for a few minutes before serving so all the flavors settle in.

Serving Ideas

  • Over white rice

  • With mashed potatoes

  • Alongside cornbread

  • Or just by itself (it’s that good)
