Flaky Homemade Breakfast Biscuits (Perfect for slow mornings)

There’s something about homemade biscuits in the morning that just feels like home. Warm, buttery, golden on top, and soft with flaky layers inside these are the kind of biscuits you make when you want to slow down, pour a cup of coffee, and start the day gently.


This recipe is simple, no-fuss, and perfect whether you’re serving your family breakfast or just making something comforting for yourself.



Ingredients



  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 teaspoon sugar (optional, but great for breakfast biscuits)

  • ½ teaspoon salt

  • 6 tablespoons cold butter, cubed

  • ¾ cup cold milk or buttermilk

  • Melted butter, for brushing





Instructions



  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.

  2. Mix the dry ingredients.

    In a large bowl, whisk together the flour, baking powder, sugar, and salt.

  3. Cut in the butter.

    Add the cold butter and use your fingers or a fork to work it into the flour until the mixture looks crumbly with small pea-sized pieces. Cold butter is the key to flaky layers.

  4. Add the milk.

    Pour in the milk (or buttermilk) and gently stir just until a soft dough forms. Be careful not to overmix.

  5. Create the layers.

    Turn the dough out onto a lightly floured surface. Pat it into a rectangle, fold it in half, rotate, and repeat 2–3 times. This step gives the biscuits their signature flaky layers.

  6. Cut the biscuits.

    Pat the dough to about 1 inch thick. Use a biscuit cutter or glass to cut straight down (don’t twist).

  7. Bake.

    Place the biscuits on the baking sheet, close together for soft sides. Bake for 12–15 minutes, or until the tops are golden.

  8. Finish with butter.

    Brush warm biscuits with melted butter and serve immediately.
